Ingredients:
1lb chicken breast (doesn't have to be boneless/skinless)
10 chicken bouillon cubes
8 cups water
2 stalks celery
2 table spoons butter
2 cups bisquick
2/3 cup milk
salt & pepper
Place chicken & bouillon in a large pot, cover with 2 quarts of water. Bring to a boil, then reduce heat and let simmer until chicken is fully cooked. I had think pieces of chicken, so mine took around 25-30 minutes.
When the chicken is almost done combine the bisquick and milk, mix until a soft dough forms.
When the chicken is done, remove and set aside to cool. Drop spoonfuls of dough into the chicken stock. Turn heat to low and let simmer for 10 minutes covered, then 10 more minutes uncovered. I ended up having to flip my dumplings over so the top side cooked with maybe 5 minutes remaining.
While the dumplings are cooking, chop the celery. I also chopped up some onion as well. In a small pan melt butter, once butter is frothy place in your veggies. While your veggies are sauteing shred the chicken. Add the chicken and salt and pepper (to taste) to the veggie mix once the veggies are cooked.
By this time your dumplings should be done. Add the chicken/veggies to the dumplings. Mix & enjoy.
*the original recipe also had you boil 4 eggs and chop the whites and combine that to the soup also, but that just sounded nasty to me, so I omitted that part :)
